Easy, Good-For-You Fast Food

Yesterday was filled with lots of little errands.  Because of this, I knew that by dinnertime I wasn’t going to feel like cooking.  But I wasn’t exactly going to feel like going out to eat, either.

Since one of those errands took me to the grocery store, I decided willy-nilly to splurge on one of my favorite “fast-food” dinners - rotisserie chicken.

A whole rotisserie chicken is certainly not as inexpensive as one you roast yourself (bought on sale, naturally).  Plus, I love to do it up even cheaper by roasting that puppy in my solar cooker.  Yesterday was fairly cloudy, though, so no-go there. It was really hot, too, so the idea of using my indoor oven just wasn’t too appealing, either.

But for 4.99, a rotisserie chicken is a pretty good deal.  Along with some steamed microwaved veggies, or a salad, or some powdered mash potatoes, that makes a pretty good meal.

So that’s what I had for dinner last night (with the steamed veggies).  Yummy, and there are enough leftovers for a sandwich or two.
